Bratt pans are deep, rectangular cooking pots with a counter-balanced pull down lid. They can be electric or gas fired and all have a tilting mechanism which can be driven electrically or by hand.  The idea is after the food has been prepared and cooked it can be pored from the bratt pan into a container via a v shaped funnel on the pan.

Functions of a Bratt pan

A commercial bratt pan is extremely versatile and will be able to perform several cooking funtions as follows:-

  • braising, boiling
  • steaming & poaching
  • stewing
  • roasting
  • deep-fat frying
  • and shallow frying

A Bratt pan can be used to fry meat when set to a high temperature and then it can be used to stew the meat after adding liquid and turning down the temperature. Once the food has been cooked the whole bratt pan can be tilted and its contents poured into another container.
